Zucchini spaghetti can be prepared with:

  • a special vegetable slicer
  • a vegetable knife and good dexterity

For the second hypothesis, it is advisable to choose very long zucchini because the spaghetti obtained will have a length equal to that of the zucchini. For those who do not have good dexterity but do not intend to buy a vegetable slicer, they can use a potato peeler. With the potato peeler or mandolin, you can create long and thin fettuccine. THEzucchini noodlesobtained will be flat, wide and long. Avoid slicing the central part of the zucchini because the seeds compromise the consistency and compactness of the spaghetti. Use this "leftover" to prepare broths, vegetable soups, risottos or vegetable pesto. If you prefer to use the knife:cut the courgettes lengthwise until you get spaghetti-like strips.

If you choose the vegetable slicer, you will have no length constraints as this tool exploits the whole zucchini by creating vegetable spirals similar to classic durum wheat spaghetti. Zucchini spaghetti or zucchini noodles: recipes

Zucchini spaghetti with cream and peas

Ingredients

  • 2 courgettes
  • a handful of fresh, tender peas
  • parsley
  • 3 tablespoons of cooking cream
  • oil and salt
  • flaked parmesan

For a lighter version, you can replace the cooking cream with delcurry. While vegans who do not want to give up the dish, they can use a vegetable cream based on soy milk.

Wash the courgettes and prepare the spaghetti as described above. Blanch the vegetable spaghetti in a little salted water. Just blanch them for a couple of minutes: being very thin, that's enough!

Cook the peas in boiling water, drain when al dente. Sauté the peas in a pan with some oil, adding the zucchini and finally the cooking cream to mix everything. To serve best, use a kitchen fork to roll and plate each portion to garnish with parmesan flakes and chopped parsley.

Recipe in a light version
For a low-calorie version, avoid sautéing vegetables in a pan with oil. After blanching (separately) the courgettes and peas in boiling water, you can blend the peas and obtain a pesto to flavor with raw oil, a little fresh ground pepper (even better if a mixture of black, green, pink) and a single tablespoon of cream. When preparing the dishes, arrange the zucchini spaghetti in the center with the help of a fork, then season with the pea cream and garnish with a few leaves of parsley and parmesan flakes.

Recipe: zucchini and shrimp spaghetti
In the photo above, the peas have been replaced with shrimp. We advise you to use large shrimps and not small ones (as in the photo) more suitable for sauces and cocktails. To flavor and garnish you can use flax seeds.

Curiosity:
do you say courgette or courgette? Actually it should be saidzucchini spaghettibecause the correct form is masculine, however the feminine form is equally widespread. According to the Accademia della Crusca, the most correct wording is in the male, so we should say zucchini spaghetti, however, the feminine word is also accepted.

Both terms are correct and validly used among the words of the Italian language, so even the feminine form is recognized in the dictionaries of the Italian language.
