Homemade hugs cookies

The ingredients for 35 biscuits:

  • 300 g of soft wheat flour
  • a pinch of fine salt
  • 100 g of butter at room temperature
  • 2 egg yolks
  • 70 g of brown sugar
  • 4 tablespoons of fresh cream
  • 2 tablespoons of bitter cocoa in powder

Select the right ingredients

When choosing ingredients, go for branded onesBioand as natural as possible. This applies to cocoa, eggs and flour. Organic cane sugar is easy to find, we have proposed this ingredient because it is healthier than the classic white sugar (more refined), however if you do not intend to buy cane sugar and you only have white sugar at home, no one forbids you to use that.

When choosing fresh cream, avoid buying vegetable cream: choose a classic fresh cream from cow's milk which is certainly healthier.

Cow's milk cream is obtained by centrifuging fresh milk and thus separating the fat molecules. The vegetable cream is paradoxically more harmful because the milk of vegetable origin does not contain fats and for this they must be artificially added with the addition of oil or worse, in the form of hydrogenated fats. Similarly for butter, avoid the use of margarines, preferably if you choose a fresh and organic butter.

How to replace cream in hugs biscuits: if you don't have cream, you can replace this ingredient with 4 tablespoons of milk or 4 tablespoons of yogurt.


1). Sugar and butter
Place the softened butter and sugar in a bowl. With a manual whisk, beat well and mix the two ingredients. You will need to obtain a light and fluffy mixture.

2). Egg yolks and cream
Mix the egg yolks one at a time. Also in this case you will need to obtain a homogeneous mixture. Gradually pour in the cream and mix until completely absorbed.

3). Salt and flour + cocoa
Salt the flour and prepare two terrines:
- in one pour 150 grams of already salted flour
- in the other, add 150 grams of already salted flour + bitter cocoa

4). Panetti
Take back the mixture prepared previously with the sugar, egg yolks and cream. Pour the mixture, in equal parts, into the two bowls containing the flour. Mix until you get two loaves, one white and one "cocoa". Wrap the two loaves in cling film and let them rest in the fridge for at least 30 - 40 minutes.

5). Hugs
The time has come to give shape to your hugs. With the two doughs, form sausages with a diameter of about one cm and no longer than 5 cm. Combine the cocoa cylinder with the white cylinder in order to create a circumference: the typical shape ofHugs. The circle obtained must be formed by two halves of different colors, one with cocoa and one with white.

6). Cooking
Cook ihugs biscuitsin the oven preheated to 180 ° C. Cooking should take about 20 - 25 minutes, but check and remove from the oven when the "white" part of the hugs is not golden.

Vegan cookies: homemade hugs with the vegan recipe

Even those who follow a dietvegancan taste ihomemade hugs biscuits. The replacement of animal derivatives is very simple: replace the egg turoli with two level spoons of chickpea flour and a spoonful of cold water from the refrigerator.

The cream can be replaced with homemade vegetable cream made from soy milk, or you can replace it with vanilla soy milk or soy yogurt.

Butter should be replaced with oil. In all cookie recipes that include butter, this can be replaced with vegetable margarines in equal quantities or even better, with canola oil or rapeseed oil, subtracting a good 20% from the prescribed dose. In this case, therefore, replace the butter with 80 ml of oil. The procedure is that seen previously for the recipe classical of homemade hugs.
